Uses for rib trimmings ??

The smoked rib trimmings go into my killer Brunswick Stew.
Would like to make something else with these blackened, smoked pieces.
Any suggestions ??
 
Yeah, I always smoke them separately and either snack on them or shred and put in my bbq beans. I don't smoke them until they're blackened though.
 
Have you ever cooked the ribs untrimmed? I prefer untrimmed spares, they are more moist.
 
Yeah beans or they could substitute well for a lot of things that call for bacon. I bet they would go well on potato salad or on a sandwich with lettuce and tomato.
 
i also never trim. i just pull off the membrane, rub, then put them on the smoker.
 
I always intend to use them in beans or something, but they end up getting eaten first :shock:
 
I've used that meat in chili or to make sausage. They are a tasty snack to smoke while waiting for he whole rack to finish
 
We never put them on the smoker, dice them up and put them in an omelet.
