Having never tried it, I found a nice pork schnitzel sammich recipe and made it with pounded thin regular pork loin (no tenderloin). It was amazing actually, and FAR superior in flavor to chicken breast :)

I haven't heard of them called Iowa Skinnies. I have heard them called Elephant Ears by some of my friends from Indiana.
 
I've never heard them called Iowa skinnies, but Smokey D's BBQ in Des Moines has a great one! I've been making my own.
