Took some inspiration from fellow brethren Jeffshoaf -
Did some spares, pork tenderloin and Texas red hots over direct heat
Also tried his coal baked potatoes method - double wrapped in foil, layed next to coals for first hour and on top of the coals for the next hour - they were a hit
For ribs and tenderloin - just a simple diamond crystal kosher salt and 16 mesh black pepper
Loins took about 45 minutes - 15 each side, and at the 30 minute mark mopped them every 5 minutes or so
Spare ribs went 1 hour bone side down - then meat side down for an hour - mopped the bone side before flipping back to bone side down - then mopped meat side every 5 minutes or so for 15-20 minutes
Simple mop of apple cider and white vinegar, red pepper flakes, Texas Pete, a little beer and some commercial bbq sauce
