What's a good knife that won't tear the brisket when slicing
I have the MABA Wusthof Grand Slicer, and it is great. I also have several other long, thin bladed knives that all work for brisket. The key is keeping them sharp.
Now on sale thru Christmas - $100The Wusthof 14" Brisket Slicer is another excellent choice. It's usually available discounted for about $100.

I use the FKH-8 for slicing and most other kitchen uses.
It will slice brisket as thin and as easily as any other knife, plus does all the rest.
