Heat index is the new buzz word in SW Florida. Today was 112F in the shade. My smoker read 98F before striking a fire so needless to say it warmed up fast.

One 18lb brisket and nine racks of St. Louis ribs were this weekend’s cook. The brisket went on Friday 6pm and off at 10am Saturday. Ribs on at 11am and off at 4pm. Cook temp was a steady 235F for the entire cook and smoke was mesquite followed by hickory. Following are a few pics, thanks for checking it out.:-o
