I am making my very first brisket and wanted to get advice from the experts.

I am making a 12-pound brisket on a Traeger Pro Series with hickory wood. I am planning on serving dinner around 6:30 pm.

How long will this take to cook?
What time should I put it in the smoker?

Any advice is much appreciated.

I am sure you will get a wide variety of suggestions but here is how I would do it. Put it on around 11:30AM at 300. I would wait about 3 hours and wrap in foil and add beef broth (or what ever you like to wrap it with). I would check for tenderness after about 1 hour. It may be done or it may take longer. Wait until it probes tender, pull it off and rest in ice chest with towels to keep it hot (or cambro if you have one). Should easily hold a couple of hours, if needed. I would expect it to take about 4 1/2 hours or so but I give you plenty of wiggle room it is takes longer. Good luck!
