Birthday Brisket & Spread...

For the past several years, I've always done a big steak, shrimp and sweet potato for my birthday meal. But, when I saw that Prime packers at Costco finally got below $4/lb ($3.99), I decided to pick up this big ole 21+lb'r.



While I'm sure most people like to go out for dinner for their big day, I'm also willing to bet most Brethren are like me, you'd rather stay home and make a good meal for your family and friends. So what better way to spend the day, then smoking a brisket and making some sides and apps...


Smoked the brisket on the Assassin 24 at about 260 for 9 hours with Oak & Mesquite, then rapped in butcher paper and it finished up about 5 hours later. Usually hold in a cooler, but I recently picked up a roaster on sale at WM, so decided to hold in the roaster for the 6 hours before serving. Went a tad over on the brisket (not sure if it was the cook or hold) but overall was still very good. Still held together, just a little more done than I'd prefer. I got no complaints, just very critical of my own cooks...


Rounded out the meal with Moink Balls, Jalapeno's, Cole Slaw, Mac n Cheese, Baked Beans and Sweet Potato Casserole.

Well.....if that's the best you can do....
Seriously brother, that looks absolutely amazing!! And I couldn't agree more that I would rather stay home and cook my own meal and not have to worry about fighting crowds and all the stuff that goes along with it. And my birthday is in December, so you'll have enough time to recover from Marty's party to come and cook mine. All in all, I'd say it was very well done, and happy birthday!

I often do the same thing - halve with the grain and then cut slices against the grain.
 
Beats any farkin' restaurant meal. Happy birthday and I do the exact same for my bday. :thumb:
