If we by some chance have leftover pork. My wife will make some french fries and toss some pork on top, jalapeños, cheese sauce, onions, and some sauce and call it Butt Fries. We don't do it often because we don't often have left over pork, but it is pure heart attack when we do.

What NOT to do with leftover pulled pork!!! I agree with many of the above suggestions, especially Mexican dishes. However I'm also thinking you could make a great British pub style pork pie to go great with some ale... Man I can tell old man winters comin with these trains of thought. Ugh.

Nachos are a go to. I mix my favorite rub with some cheese sauce, make my nachos like normal then top with the pulled pork.

Bbq spaghetti is good too, spaghetti, bbq sauce and pulled pork. Can't go wrong.

put it in fried potatoes for breakfast. They do this in Hawaii with the "extra" luau pork at the resorts. Its awesome.
