fwiw - Stater Bros sells select grade beef. I've cooked one of their TTs & it was good. However.... a nicely marbled choice is "mo bettah".

It came out ok, I like it a little more rare, just seasoned with Hawaiian sea salt and fresh cracked pepper.

We don't see many good Tri-Tips around here that are untrimmed anymore. About 10+ years ago, a lot of Tri-Tip was trimmed with a 1/4 inch fat cap - this would be my preference if I had a choice. But, when you can get Tri-tips like these, who's to complain?
