wanted to share a great cooking experience that i had last evening.
First, i started off by using a healthy dose of Kamado Joe steak seasoning and allowed the meat to rest for an hour while i prepped the fire.
then, i cooked the trip-tip indirectly at 300 degrees with some pecan wood for smoke flavoring.
then, after 100f i.t., i put the tri-tip onto the Cast Iron grate to sear things up
and then the money shot!
