This:
Had a couple of full slab of spares. Cut them down to St. Louis and rib tips.
Seasoned with Q-Salt and they hit the Shirley .

That:
One of our favorite summer appetizer/side dish items are bacon wrapped pears.

Cored and quartered the pears, wrapped in bacon and seasoned with Gingery Orange.

They hit the smoker on the top shelf (beside the tray of beans)

Before the ribs and pears came off, they got hit with a honey & cherry jam glaze.

Now that's how you do it, John - excellent balance of entree, side, and salad! Speaking of which:

Waiter: Sir, are you ready to order?

Me: Yes! I would like to have a plate of this with that, with the other thing on the side, please.

Waiter: Excellent choice, sir. You really know how to order!

One of the best things about this place is that if you open a couple of cook threads a day, chances are you will see something unique and that you have never seen/ thought of before, and John, you are pretty consistent with that. Very nice job on all of the elements of that meal!
