1 tube chorizo, check. 1 pkg shredded Chihuahua cheese. 2 small flour tortillas.

Cook chorizo in skillet over low heat until visibly done. Take out a couple spoonfuls and reserve for later. Add six ounces of cheese over the top and let melt. You will see the red chorizo liquid work its way up into the cheese. When the cheese is all melted, place a flour tortilla over the mixture for a few seconds to warm, then flip and repeat and move to plate. Repeat with the other flour tortilla. Now spoon reserved chorizo over the cheese. You can scoop out "tacos" but I just shoveled the whole pan onto the 2 tortillas and had a fine lunch. Really a lot like a Tex-Mex pizza.
