Pineapple has an enzyme that turns meat mushy weird, powdery grainy texture. As evidence by the linked thread above. Don’t marinate or have fresh pineapple touching your meat.

Cooking pineapple destroys the enzyme, hence pineapple juice or canned pineapple is ok.
 
Yep, check the link. Use thick cut bacon if you try it. The thin cut I used started to disintegrate. Probably want to pre-cook the meat as well.
 
Yeah I’m pre cooking the ribs tonight and gonna stuff the pineapple tomorrow.

Yup, found this out once when I marinated pork overnight in a mixture containing blended fresh pineapple. The pork was like paste after cooking. Totally disgusting. :doh:

Was good.. my rib rub along with the pineapple/bbq glaze

For me I was waiting for the heat :thumb:

Had pleanty of sweet.. I should have used like a VooDoo or Heat rub on the ribs or use a heat glaze or both

Think I need to redo this very soon…. Want to do a Sweet and heat
