I've posted these before but they're always worth another look.

Stuffed Red Peppers for Sunday dinner

Today we're using burgers made with a mix of ground beef and turkey seasoned with Bovine Bold, both sweet and hot Italian sausage and bacon. As usual, no rice in these Stuffed Red Peppers.

Grill all the burgers, sausages and bacon -

Dice the sausages, crumble the burgers and bacon and mix together with tomato sauce and shredded Mozzarella -

Stuff the peppers, add tomato sauce and top with Mozzarella -

Back out onto the grill it goes -

until it's heated through and the cheese is nicely melted -

Thanks all. The original inspiration for these came from a BBQ Pit Boys video, way back about 10 years ago. I loved the no rice concept and that the meat was already cooked when stuffed into the pepper.

As for the red peppers, we simply prefer them to green. I know red is just another stage of a green pepper but I like the taste better.
 
Nice! Did you blanch or cook the peppers at all prior to stuffing?

No. Peppers are placed in the cast iron casserole raw. Cook time is 20-30+ minutes during which they soften a bit but still hold their shape and texture/crunch. Just one of the benefits of precooking the meat stuffing.

Wow, those are next level…we made some recently but I cooked the meat in the frying pan…I need to step up my game for sure!
