Been hankering for a good steak for quite a while. Bachelor night tonight. Top Sirloin was on sale. Got a full cap untrimmed. Cut a good steak off of it. It's picanha time!

Served up with chicken and spinach dumplings with some soya and spring onoins.

Was good, but the steak was pretty tough.

Nice...my new way to grill steaks is over a vortex as well...high heat sear...then finish on the side.

Sirloin can be tough...but not so much with Picanha...yours looks perfect.
 
Yea, that's a nice looking cut of picanha, and you done it justice. If you trim down the fat cap to about 1/4" you'll get a little bit better crunch.
