I’m not sure why, I really am not looking for anything new, just new ways of cooking old. My whole background in outdoor cooking was grilling up until about January 1,2008. “I love to smoke but prefer the taste of grilled “ still applies. I stumbled across a 1986 Texas Monthly recipe by Jim Goode. It was a rub recipe. That reminded me I have a BBQ book with this name

https://en.wikipedia.org/wiki/Jim_Good

In The Legends Of Texas Barbecue cook book Mr Goode’s recipe for plugged brisket is listed. I’ve inserted garlic into prime rib, pork butt, pork loin etc etc but I’ve never inserted anything into a brisket then used the hard fat of a brisket to plug the hole. I found something interesting here.
Plugged Brisket

Yeah, the lockdown/virus thing has me bored, too. Find myself drooling over different recipes and equipment. Smoke flavor is an art..

So when are you purchasing the fire pit grill to cook your plugged brisket?
