I stumbled across a 1986 Texas Monthly recipe by Jim Goode. It was a rub recipe. That reminded me I have a BBQ book with this name

In The Legends Of Texas Barbecue cook book Mr Goode’s recipe for plugged brisket is listed. I’ve inserted garlic into prime rib, pork butt, pork loin etc etc but I’ve never inserted anything into a brisket then used the hard fat of a brisket to plug the hole. I found something interesting here.
