Mother’s Day Dinner:
Smoked Junk Meatloaf

Junk meatloaf is a meatloaf made with the junk leftover in the fridge or freezer.

2 lbs of ground beef
1 lb of bacon, diced
3/4 lb of leftover double smoked ham, diced
1 onion, diced
3 slices of cheddar cheese, chunked
2 teaspoons of Q-Salt

Mixed together and formed into a rustic loaf of meat.

The loaf went directly on the grate of the smoker that was running cherry wood
Smoked at ~250F for ~2.5 hours

Very creative and unique. Never heard of anything like that but I would definitely give it a try. Very cool!
