Shoulder Clod Over Direct Heat

Clod is a whole beef shoulder - served at Smittys and Kreuz in Lockhart Texas - pretty versatile piece of beef - is leaner than brisket - you will see folks cook to 180, 195 or 205 - depends what you want to do with it


Nice! Thanks for the write up. I first heard of clod several months ago and, being curious about it, I made it a point to stop by Kreuz in Lockhart to have some (as you'd mentioned, they're known for their clod). It's definitely leaner than brisket. It's the same price as brisket here in SoCal so, I'll not be doing clod anytime soon as I like brisket much better. That said, if someone gave me a clod, I'd cook it. Nice work!
