Searching video how to cut a shoulder into Boston Butt

Hi,

As the title says... I am searching for (instructional) video / movies where is clearly shown how to cut a pig shoulder into a perfect Boston Butt with a nice Money Muscle.

When I asked my butcher for a Bostun Butt (i do not live in USA) he did not know what to do so now he is selling whole shoulders.. but how to cut these into Boston Butts in such a way one can see the money muscle?

So maybe i can teach my butcher how to do it

Isnt the money muscle the end opposite the picnic? it should be visible with a little trimming

The money muscle is on the Boston butt, the shoulder is a different cut all together. The KB BBQ does a nice video on the money muscle....

Whole shoulder = upper portion the Boston butt and the lower portion the pork picnic, then the shank.

WOW :shocked: I haven't seen knife skills this bad in a long time :tape:. She knows how to break down a primal but I wouldn't want to be in the kitchen with her. She already has one finger bandaged.
