Trying to decide what to do with Scallops I bought yesterday. I didn't want to do the usual pan fry, serve with pasta, etc.
The Blackstone to the rescue with a Scallop Stir Fry.
Ingredients:
Scallops
Red Bell Pepper
Green Bell Pepper
Orange Bell Pepper
Yellow Bell Pepper
Onion
Garlic
Snow Peas
Udon Noodles
Matchstick Carrots
Cole Slaw Mix
Veggies, out at the Blackstone -
Udon Noodles, Cole Slaw, Soy Sauce, Sesame Oil, EVOO -
Scallops, dredged in flour, S&P, Old Bay so they crust up nicely on the outside -
Denser veggies which take longer to cook go on first with the Scallops -
Searing nicely just as I expected -
All mixed together with the Udon Noodles, Snow Peas and Cole Slaw going into the mix last -
Plated -
No need to head out for Chinese takeout at my house. The scallops were perfectly done, seared just as they should be and sweet. Veggies were still nicely crisp. And it's oh so colorful (yeah, you do eat with your eyes!)
It should be pretty healthy given that it's mostly veggies.
If you haven't made up your mind about getting a Blackstone, I hope posts like this are swaying you in the right direction. :wink:
