Everything looks wonderful, so give us more details about that turkey , is that sweet tater I see in that pan.

I got a Patio Daddio brine recipe on a thread here using the fancy advanced search button. Then another thread posted by Capn Ron linked to another thread for the actual cook times and temperature. And no sweet potato, I stuffed the cavity with a 1/4 wedge of a Bosch pear, a 1/4 wedge of a granny smith apple, a 1/4 wedge of an orange, and a 1/4 wedge of a sweet onion. I just sliced the remaining 3/4's of each up and added to the pan, along with some OJ, and smoked it all. That is probably the orange you see...
