Shreveport, LA. I might cook a KCBS contest the weekend before in Huntsville, TX just to get a little more experience under my belt.

That would be very helpful.......you may also just shadow a team. I'm sure someone would let you just hang out with them for the weekend just to watch. That is a very low pressure contest, and if we were cooking it we would love to have you join us.

That's a very enticing offer, and I may take you up on that. Going to talk to my teammate later and see if he's up for cooking it, but if not I will probably be PM'ing you.

How fast do these all fill up? First week? First night? First hour?

Depends on where. Some filled up in 15 minutes, others won't fill up ever.

In just one minute after opening registration, the Sam’s Club National BBQ Tour had 197 teams registered and by 30 minutes, 511 teams were registered. Jae Star BBQ was the first team in and Overland Park was the first local competition to be filled.
