Ribs in the 580

Just the wife and I tonight. Keepin' it simple: ribs, potato salad and pintos.

Grabbed a rack of spares and kinda' sorta' gave 'em the St. Louis treatment. Hit 'em with a basic BBQ rub (brown sugar, salt, pepper, chili powder, etc.). Loaded the MAK with a mix of Cooking' Pellets Hickory + Cherry. Ran it on SMOKE for about an hour, bumped to 245F, spritzed a couple/three times, wrapped in BP, bumped to 275F til done.

Kevin, you have me intrigued. A couple of questions if I may?

- Did you buy a name brand rib?
- If so, which brand?
- Did you pull the membrane?
- If so what did you use to get it started and did you use paper towels to get a grip on said membrane?
- Did you use regular brown sugar or dark. Which brand?
- Regular or koshers salt? Again please specify the brand.
- How coarse was the pepper and which brand?
- What was the Scoville heat unit of the chili pepper and again can't wait to hear which brand.
- Did you buy the pellets pre-blended or did you do your own blend?
- If you did the blending what was the percent of hickory vs. cherry?
- How long did you let the MAK pre-heat before adding the ribs?
- How long at 245 degrees?
- What was in the spritz and if any name brands were involved which ones?
- Size and brand of spritz bottle.
- Approximately how many ounces of liquid per each spritz.
- You say 2 or 3 spritzes. Can you try and recall whether it was 2 or 3?
- Size, weight, color and brand of butcher paper?
- How long in butcher paper?
- Can we see some pics of the ribs after they were cut?
- How long did you let them rest? And was the rest while in the paper?
- Your phone number starts with 580. What are the other 7 digits and is there any time of the day when I can't call you with further questions?
