No longer a brisket virgin! PBC Brisket and burnt ends!

I'm really rather jealous... haven't had brisket in quite some time.
 
that briskett looks awesome!! i cant wait to to do one next week i hope mine comes out as good. I may say screw the tri tip LOL :) i've never had it so i wont be missing anything. Did you use a maverick or something to keep and eye on your temps??? ive been debating that or an igrill.

I do/did use a maverick to monitor the cooker temp and the internal temp of the brisket. Many people have cooked without monitoring the PBC temp but I'm just OCD about it...lol :becky: I only monitored the IT of the brisket to have an idea when to wrap and when to start probing to doneness....

It's very easy with the PBC. Just watch the video and do what they do. Only thing I did not do was add a liquid to the brisket when wrapping in foil. It was plenty juicy without.
