My turn at beef short ribs with baby backs, semi-live.

Sorry about the baby backs, they turned out fine no after pics of them. The short ribs were the main thing. The baby backs did get burned a little on the bottom. I was testing to see how close I could cook on the firebox side. Going to have a full cooker next weekend.
 
Looks great! How long did they take at 300? I have a 3 bone plate I'm going to try tomorrow and am not quite sure about time.

It took me a little over five hours. It started probing tender about 4.5hrs or so but wasn't where I liked it.
 
Thinking about the last cook, I'm going to pull the back skin next time and cook at a slightly lower temp. They weren't to bad for the first time cooking uncut short ribs.
