Anybody concerned about the removable baffle plates? Traditional RF baffle is welded. All those edges on movable baffle plates seem to me like that could take away longevity. Any thoughts? Still, for $1500 that's a hell of a cooker, plus it beats the wait time for my Shirley

Removable allows you to clean underneath. I don't think it'd last any less time than welded and if they did rust it'd be much easier to replace.
