So there's a leftovers throwdown and I am the king of leftovers. Especially Thanksgiving. I always cook a second turkey so that I can have extra leftovers. I make all sorts of stuff with them.

This year I made Leftover Turkey Pho.

Let's start with one pecan-smoked turkey:

After it is sliced, picked, and deboned, we make turkey stock:

We strain and reduce it by half:

Then we toast coriander seeds, fennel seeds, cinnamon, and star anise:

Add the reduced stock, fish sauce, a knob of ginger, and a bunch of green onions. Simmer for an hour and a half:

Strain:

Gather other ingredients - Rice noodles:

Garnish - thin sliced onions, jalapenos, and lime:

Leftover turkey:

I added the turkey and ladled the boiling stock over the noodles. Assembled as a soup:

This dish was really, really good!. My #2 daughter, who is already a fan of my cooking, said "Dad, this is the BEST THING YOU'VE EVER MADE!" She asked me to write down the recipe before she leaves for college.
