Latin mojo tacos and a few short short ribs

My main goal for this meal was the pork tacos, but I found a few short ribs in the bargain bin at Kroger so threw them on as well.

Blended a mojo marinade in the blender, strained, then injected into the pork butt. The leftover solids are then slathered over the outside of the pork. Topped off with some cracked pepper, and stuck in the fridge overnight. The short ribs were sprinkled with tatonka dust. Here they are ready to go on my newly acquired Lang 36.



Here is a shot of the pork just before wrapping.



The ribs finished early as they were cut short ribs. Melt in your mouth appetizer.



The pork finished later, was pulled, and mixed with some of the pan sauce.



And finally, the tacos. Oiled and griddled yellow corn tortillas, spicy orange salsa Cole slaw, then topped with a bit of pico de gallo. Really hit the spot tonight for dinner.
