With Football season going on it had been several weeks since I had the opportunity to fire Bertha up. Friday night lost out of the playoffs, so it's time to become reacquainted with her and smoke it up! I have recently got in a shipment of Kosmos' rubs (Dirty Bird, Dirty Bird Hot, and Honey Chipotle Killer Bee) so I wanted to see how they tasted.
Saturday I trimmed some spares into St. Louis style. I used the Honey Chipotle on the ribs and put Dirty Bird on the rib tips so I could compare the rubs. I also decided to cut the rack in half so I could do half dry and half with sauce (also helped the ribs finish before the Clemson game.) The ribs got a little lonely so I figured some Cheddarwurst could keep them company. My verdict on the rubs...Dirty taste good on ribs, but it doesn't compare to the Honey Chipotle. The Honey Chipotle gives a great amount of flavor and just the right amount of kick to get your attention. My wife said the same thing and she hates spice, so this is definitely considered a win. The ribs came out with a beautiful smoke ring too.
Sunday, we were having Homecoming at church and whole boneless pork loins were on sale. I got a whole loin cut into center cut boneless pork chops (3/4") thick. I rubbed them with the Honey Chipotle the night before (because it won the taste off on the ribs) and allowed them to soak it up. Fired up Bertha early Sunday morning and let them ride at about 290*. Sauced them up and they were ready to go. Chops turned out excellent. My miniature thought so as well! Had 2 leftover and had them for lunch on Tuesday. Think they may have been better Tuesday then they were on Sunday. Thanks for looking.
