It was nice NOT… to have any kids sports and just go home after work and relax next to the grill with some;
Grilled Chilean Sea Bass with a brown butter lemon sauce, Hassel back potatoes, asparagus and rolls.

Hard to beat a cast iron griddle to get that crispy fish skin.

Damn - that is some of the best crust on fish I have seen in a long time

Nice cook on the Patagonian Toothfish!!! (Actual name) Fish retailers thought "Chilean Sea Bass" might be more a more marketable name in the US.

Pearls of wisdom.....

Very classy, I don't eat fish but my wife drooled looking at that.
It all looks most excellent

Assuming it’s not an allergy issue, that specific fish might be the one to try. I never really liked fish and first tried sea bass at a nice hotel as part of a surf and turf combo. I actually preferred it to the filet, and not because they had botched the steak. Absolutely fantastic. I’ve had it a half dozen times since and it’s always been very good.
