I love the flavor of the red ones but have a hard time roasting them. They tend to blow open from the steam they create inside.

For me the red ones work better as a fermented sauce.
But that's just me.

Sometimes I let the roaster do it with propane, I like to do the hot color chiles with mesquite lump and a hickory split

Did you ever try estimating try gauging the spiciness by how pointed the end was ? Guess one would just have to take the signs truthfulness on the hot factor. Got some roasted peppers from HEB that said mild .... wrong ... hot .. hot ... hot !!
