I find that most people I know, who dislike coleslaw, actually prefer the grated cabbage over the shredded if they are willing to try it.
You will also find there are so many spins on slaw, just like any other food item. Here are a list of slaw recipes that brethren have posted over the years.
Guerry's Slaw
One head chopped cabbage - no other vegies!
1/2 cup vinegar
6 tbs sugar
6 tbs EVOO
2 1/2 tsp dry mustard
1 tsp celery seed
1 tsp dried celery
1 tbs hot sauce to taste
Combine vinegar, oil and other ingredients in a sealed jar and give it a vigorous shake. Pour over chopped cabbage and toss. Let sit in fridge for two hours or longer (Overnight if you can resist). Toss again before serving.
This will juice up quite a bit so you can use a slotted spoon to serve if you wish.

Bob Gibson's Marinated Coleslaw
1 large head cabbage, shredded finely (I use my food processor)
1 cup white vinegar
1 cup granulated sugar
1 teaspoon salt
Preparation
Combine ingredients in bowl with tight fitting lid OR in a gallon zip bag. Allow to marinate, stirring or turning every 2-3 hours.

BluDawgs Savory Cole Slaw
Ingredients
14 ounces coleslaw mix
3 scallions, chopped
1/2 cup mayonnaise
2 tablespoons pickle juice ( dill pickle juice is the best)
2 teaspoons lemon juice
2 -4 drops hot pepper sauce ( like Texas Pete)
1 teaspoon garlic powder
1/2 teaspoon celery salt
1/2 teaspoon salt
1/2 teaspoon pepper
Directions
Place the cole slaw mix and chopped scallions in a big bowl.
Mix rest of ingredients in measuring cup or small bowl. Pour over cole slaw and scallions and toss well.

Harry Soo's Slap Yo Daddy's Slap Juice Coleslaw
1 cup mayonnaise (I use Best Foods)
1/4 cup apple cider vinegar (use more or less to adjust the sauce thickness to your liking)
½ cup white sugar
1 teaspoon yellow mustard
1 teaspoon SYD Original Rub
dash of white pepper
Bag of coleslaw mix
Mix Slap Juice ingredients in bowl with a whisk. Ensure sugar is completely dissolved. Toss with store-bought coleslaw. Serve immediately like a salad

BigMista's Pineapple Coleslaw
1 head cabbage, shredded
1 can pineapple chunks (SAVE THE JUICE)
1/2 cup apple cider vinegar
1 tbsp blackpepper
1 tbsp salt
1 tbsp brown sugar
Put the cabbage in a bowl. Add the pineapple (I like to give it a rough chop first). Mix the vinegar with 1/4 cup of the pineapple juice. Add the rest of the ingredients and mix well. Pour over the cabbage and pineapple.

Paula Deen's Peppery Coleslaw with Orange Chili Vinaigrette

1 (16-ounce) bag 3-color slaw mix
1 poblano pepper, seeded and diced
1 red bell pepper, seeded and diced
1/2 jalapeno pepper, seeded and minced
Orange Chili Vinaigrette, recipe below
Directions
In a medium serving bowl, combine the slaw mix and the peppers. Just before serving, add the Orange Chili Vinaigrette, tossing gently to coat. Serve immediately.
Orange Chili Vinaigrette:
1 teaspoon orange zest
1/2 cup fresh orange juice
2 tablespoons fresh lime juice
1 tablespoon Dijon mustard
2 teaspoons sugar
1/2 teaspoon ground cumin
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1/3 cup light olive oil
2 tablespoons hot chili oil
In the container of an electric blender, combine the orange zest, orange juice, lime juice, mustard, sugar, cumin, salt, and pepper and process until smooth. With the blender running, add the oils in a slow, steady stream. Cover and refrigerate until ready to use.

Mustard Cole Slaw
Head of cabbage about 1 1/2 lb, thinly sliced
1/4 C Cider vinegar
1 T granulated sugar
1 t celery seed
1 t kosher salt
1/2 t black pepper
3/4 cup mayo
1 T Dijon mustard (Grey Poupon is best)
Mix the liquids and spices, pour over thinly sliced cabbage.

2 1/2 to 3 pounds/1.1 to 1.3 g white cabbage
1 cup/240 mL cider vinegar
2/3 cup/160 mL ketchup
1/2 cup/120 mL water
3 tablespoons/45 mL sugar
1 teaspoon/5 mL salt
1/2 teaspoon/2.5 mL cayenne pepper (optional)
1/2 teaspoon/2.5 mL black pepper
1/2 teaspoon/2.5 mL chili powder
dash of hot pepper sauce like Tabasco
