For father's day I wanted to cook diner for my wife and I. Decided on a cowboy steak which i have never done before. Bought a nearly two pounder from the butcher counter and went at it. Used the WSM for a bit of slow cooking (250°ish til about 113° IT and then reverse seared on the bottom part of the WSM. Pulled around 130° in most parts. It was fantastic! thanks for looking!
