Fattie Question

I was over come by life events last weekend and was unable to do my first fattie. I am going to do one tomorrow while doing a couple of turkey's :clap2:. I decided to do an Italian one. My question is, can I roll it up today and put in the fridge to smoke tomorrow?

They generally seem to hold together better when chilled beforehand......

Some folks use those piston things for the center, then chill that, then wrap up , wrap tightly in plastic wrap & chill a second time......as long as there's not a ton of salt involved in the rub, overnite s/b fine.....
 
Ran in to a slight problem. The two turkey's took up the entire smoker. Going to have to put the fattie on after the turkey's come off. I sooo need a bigger smoker.
 
I do this every time if I can. The fattie holds together better if it is chilled. I do not bacon wrap or rub mine though, normally.
