Escabeche Twist on Cowboy Candy

Found a local Mexican place that still serves you escabeche. Haven't seen that in years, but oh so good.

So I decided to put an escabeche twist on some cowboy candy. Jalapenos, carrots, onions, radishes and garlic because I'm a Polak and garlic makes everything better.

Now we wait for the magic to happen.

Right now, I'm working on pickling eggs with smoked sausage. Lots of garlic involved. :laugh:
