Found a local Mexican place that still serves you escabeche. Haven't seen that in years, but oh so good.

So I decided to put an escabeche twist on some cowboy candy. Jalapenos, carrots, onions, radishes and garlic because I'm a Polak and garlic makes everything better.

You ain't wrong about garlic!

Looks great! There was a place many moons ago when I was at NIU that served it and it was amazing.

Just out of curisoity, what is the local place?

Cheo's House in Bartlett. Little place in a strip mall.
