Well, some of it was on the Blackstone. Kinda hard to bake on it. :rolleyes:

Eggplant, Italian Sausage and the remainder of the Breakfast Sausage (skipped making breakfast this morning) griddling away. This is not your usual breaded eggplant. I like the taste of the eggplant to shine through with just a touch of EVOO and S&P -

I only wish I had remembered to grab a loaf of Italian bread, but I've got sourdough dough proofing all day, ready to be baked later this evening.

This was easy to prepare and tasted great. Thanks for checking in on today's Sunday dinner!
