Just the two of us now, our last kid moved to Colorado a few weeks ago. So since I was just cooking for two I did one slab of spares and one fatty.

I used Stripling's sausage from Stripling's General Store in Moultrie GA. (I believe I've had my last JD)

Anyway, turned out pretty good. Here are a couple of shots...

Looks very delish! Is the fatty cooked over indirect heat? I'd be afraid flare ups.

No, the fatty and the ribs were cooked indirect. Banked a chimney of coals on one side and let grill settle in at ~300 deg. Cut slab in half and stacked on off side, shuffled about every 45-60 min, sauced a couple times in last hour. Put fatty on for about the last hour and a half. un-stacked ribs for last 30 min. Total cook time about 4.5-5 hrs.
