I had about 6 slices of leftover genoa salami in the fridge from making Italian hoagies, so I decided to do something different for breakfast. I thought it was good, but I like fried genoa, egg, and cheese bagels for breakfast too. I wouldn’t go out and buy genoa salami just to make it, but I would definitely make this again if I had leftover genoa in the fridge.
It was prepared in the usual way:
Cut salami into little pieces and pan fry,
Add butter and flour to make a roux.
Add milk and salt and pepper to taste.
Stir until it comes to the proper consistency and serve over toast.
I eyeballed everything and the sauce was a bit thicker than I prefer but it was pretty good.
