Cowboy Lump almost ruined my cook

I know lots of people use this method, but I have not ever heard a satisfactory explanation of why you don't get dirty smoke.

the unlit coals get super heated and ignite cleanly. this is why you have to wait 30 minutes or so for a minion burn to clean up before adding food
 
Thanks smoke ninja. I thought it was just for grill to settle at temp... So thinking further, it also becomes a problem if you have to add charcoal during the cook... So what is the "correct" procedure if you have to add charcoal during the cook? As in try to extend the minion? Or can you only light coals and let the ash, then add?
 
I've only tried one bag of lump, Fogo, and was not impressed. I'll stick with Weber bricks.
