In the mood for chicken, so I picked up a couple cornish hens for something different.


Set up the kettle for two heat zones, direct and indirect

Spatcocked the birds, Basted with Chiavetta's Marinade and Dusted them with Oakridge Game Bird and Chicken placed them over direct heat

Moved the birds between direct and indirect allowing the thighs to cook all they way without over cooking the breasts
Finally they were done, now to quickly crisp the skin...

Someone else posted cornish game hens a few days back and I got the bug. Have yet to still fire up my Kettle and do them.

Those look fantastic!
