Kiln dried wood can smoke like crazy when you first put it on, kilns can dry wood way down under 10% moisture content, much drier than just letting it sit out. When wood is that dry it offgases extremely fast and you get dense smoke. Having a little higher moisture content regulates how fast wood offgases as it burns. My guess is your hickory is extremely dry.
