Jalapeno Poppers. One of our favorites. I prefer to prep using my** Cockpit method. Several other ways to prep, infinite ways to stuff. This was smoked breakfast sausage, cream cheese and wrapping Hatch Green Chile Bacon. Just smoke, grill until bacon is desired doneness

Good idea, Adams.

Makes for a higher pepper to stuffing ratio than cut in half if you like that.

Also keeps the stuffing in place better.

I'm not so much the HOT loving guy so I'll probably stick with mounding up my stuffing tall on a half pepper so it's not quite as hot as a whole pepper.
