Chilling Sunday with Barbecue in the BackYard...

Sunday was on the brisk side, a little breezy and with the threat of rainfall at any moment. What a perfect time to chose to cook some barbecue....roll the dice, take a chance...
Along with a few lengths of Beef Sausage, I've got one slab of spareribs and some poke chawps, seasoned with Mike Mills Magic Dust, check the interwebs for his recipe, it's my go to homemade rub when I don't have any of that fine, fine Simply Marvelous stuff in the cupboard....and of course I'm out of it...dangitall....

Here I'm lighting half a small chimney of RO lump....

I cooked with the Stubby DrumPit, using some Royal Oak Lump and a few fist sized chunks of Black Cherry wood buried within the charcoal basket...

Spread the ashed over lump evenly ontop the charcoal basket...

Then covered with a disc harrow blade...the heavy iron acts just like a heating element in an oven...

Waiting on the temp to stabilize....

My beard does double duty as a wind gauge...SxSE @ 7 miles an hour....Lol!!!

the sausage was done in 30 minutes, the poke chawps took a little longer, about an hour...

ribs an hour in....

time to add some bacon wrapped meatballs....

once the bacon started to cook, an uninvited guest came sniffing around...

bacon was cooked to my liking in about an hour...

then was glazed in sauce, back on the cooker until the glaze set, about 30 minutes...pretty!!!

I then used the same glaze upon the ribs around 3 and a half hours into the cook...
glazed them once more, 15 minutes later...

After four hours the ribs were done...and they were bite off the bone perfection...and messy good!!!

Cooking in a barrel reminds me of Learning To Fly by Pink Floyd.
Amen to an existential cook.
Looks mighty fine, in a nondenominational religious kind of way.
 
Everything looks great. That's another reason I like low and slow. Gives you a chance to stop and smell the smoke once and awhile.
 
Thank goodness your quality control neighbor dog was on the job!!!
