Me dear 'ol Mum made a meal consisting of a cornbread pancake then a over easy egg followed by some raw onion rings, then a ladle of hot stewed tomatoes, then repeated
for a second layer.
Very few things I would balk at eating, I'm sure I whined the whole time but at my house you ate what was served or you didn't eat!

Sounds similar to my Grandmother's meal, and one of our favorites. She called it "Depression Enchiladas" since there was no meat. She would cook down a big can or two of peeled tomatoes, onions, & stuff all day while doing the housework and laundry (back when mom was still a kid!). Served over cornbread pancakes, with cheese, lettuce, onions, in two layers.
Mom never could get it to taste like she remembered, and finally gave up... By the time I was eating it we used Morrison Corn-Kits, less sweet than Jiffy.
