Dumpster Fire BBQ
$8.

It looked kinda like a Tri Tip , so that caught my eye.

Dry brined with Spogos for 24 hours.

Smoked with oak wood on the kettle running 250F for about 45 mins to an hour.

Then brushed with smoked beef tallow leftover from last week's beef ribs and heavily dusted with Carne Crosta

Then seared off and sliced.

Turned out really good.

Thanks for lookin!

That sure looks like sirloin cap/picanha, minus the fat cap.

Now that I look at these pics, I think you're right. The grocery store I got this from had this marked as just Sirloin, on sale for $4 a lb. I went through the whole bin and this one jumped out at me because it looked different, and was significantly larger than the rest.

This store aggressively trims the fat off of almost everything, leaving some cuts having a weird shape that is hard to identify. But all their stuff is sourced from local farms and is fairly high quality.

This particular batch of "sirloin" had fairly good marbling on all of the cuts. I should have gone back and gotten more, as this piece was one of the best pieces of beef I've had in a while.

Funny thing is, I have been trying to find a whole picanha for months, and no one carries it around here.

Keep an eye out for mislabeled deals from your grocery stores! A lot of the newer butchers don't seem to know what they're doing, and labels and pricing seem arbitrary.
