So I am going to get the UDS out tomorrow. Trying a brisket. I tried one a few years ago and it came out ok. I am not sure what I bought though. My mom picked it up from Costco. She said its 6.7lbs and she asked the butcher for a whole brisket, whatever that means I don't think anything. Anyway this is what she got, she put some rub on it and gave me it in foil. I cant really tell what this thing is from looking at it now. I attached pics maybe someone here can help. I also have some other questions. Should I just smoke it at 225 since its smaller and do the 1.5 hours per lb? Is that how I know its done or it's done when its 195degrees inside the meat? I don't understand that logic? What if I had it at 300 degrees wouldnt the internal temp get to 195 degrees faster? Can someone give me a little better understand on what this thing is and what/how to cook it?
