Brisket Nirvana

I haven't posted in here in quite a while. Sometimes life leads you away from things only to bring you back. I haven't really cooked that much in recent years, I smoke some stuff from time to time to stay in practice.

Yesterday I smoked a brisket, my wife had been wanting one so she got it. It was a choice brisket, not prime, not wagyu, just choice. It was righteous, as good as I've ever made or eaten. Sometimes you just nail it, this was one of those times!
