I've been wanting to make breakfast rellenos for awhile, but had too much going on to get it done.
My "girls" are laying pretty well right now, which is nice for winter. This is a good way to use up some eggs.
I browned some beef chorizo...
scrambled fresh eggs in butter...
added onions, cilantro and cheese to the mix...
blistered, steamed and peeled some anaheim and poblano peppers...
stuffed with the egg, chorizo, onion, cilantro, cheese blend...
rolled in flour to help the batter "stick" ..
Batter...
One egg divided for each chile, one tablespoon of flour for each chile, a dash of salt.
Beat the whites to the stiff stage...
add the yolks and fold into the flour and salt..
I set up the fancy cooker and heated oil in the comal...
plopped the stuffed chiles into the batter to coat, and they are ready to fry...

Breakfast is ready...
Served with my usual sauce... tomatoes, chicken broth, onions, garlic, oregano, salt, pepper... I think that was all.
I liked it. The chorizo added a nice light kick, not too hot. I liked both the anaheim and the poblano peppers equally.
I was able to wrap a few of them for the freezer for quick breakfasts.
